For some reason, I always associate truffles with luxury…wouldn’t you agree? Maybe it’s because I automatically think of the super costly tubers that are carefully grated or shaved onto dishes. I am nowhere near as good at cooking as I am at baking (plenty more to learn about baking too, for that matter), so here is a recipe for gluten-free chocolate truffles that will look oh-so-gorgeous and luxurious on your Holiday dessert table. These are also shockingly easy to make – just melt the ingredients together, and then chill, roll and toss in your preferred topping! Not to mention your guests will ooh and aah at your homemade truffles, and the addition of Jack Daniel’s whiskey gives them a little extra je-ne-sais-quoi flavour kick.
Minimal effort, maximum payoff!
Combine chocolate, peanut butter, unsalted butter, whipping cream and salt in a heat-proof bowl and place over a saucepan with 1-2 inches of simmering water. Stir with a silicone spatula until all ingredients are melted and well combined. Remove from heat. Add Jack Daniel’s Old No. 7, stir to incorporate. Chill mixture in fridge uncovered for 2 hours. Using a small cookie scoop, make evenly sized balls, push a whole hazelnut in the middle (optional but recommended), and place them on a baking sheet lined with parchment paper. Chill truffles for another half hour if they are getting too warm, then shape them further into smooth balls. Roll or lightly press in topping of choice. Keep refrigerated in an airtight container for freshness.
