Easy carrot sheet cake

Easter is coming and you need to feed a small crowd? This super quick and easy carrot sheet cake is sure to be a hit! I’ve made the frosting with plant-based butter as well, and it worked great if that’s something you prefer. The carrots and the adorable little bunny are made from shaped coloured pieces of fondant, and he’s digging up dirt made of chocolate graham cracker crumbs. You get to dodge the particularly challenging task of building a full bunny out of fondant, and instead only need to build the booty, tail, and feet! You might find it helpful to use the side of a toothpick to make the indentations on the carrots and make the carrot stem by snipping several times into a piece of green fondant. This was so much fun to make and the décor truly completes it!

In a small-med bowl, combine all the filling ingredients. Mix well to coat.
In another bowl, combine the crisp ingredients. Use a fork or your fingertips to rub them together to moisten.
Add ½ the apples to a microwave-safe mug. Top with ½ the crisp, roughly crumbled over the surface. Add the remaining apples on top. Finish with the remaining crumbled crisp. Microwave 4 ½ minutes on medium power (60%). Mug will be very hot, let cool a few minutes, then top with a scoop of ice cream if desired. Enjoy!

Cake

  • 283g all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 200g sugar
  • 150g packed light brown sugar
  • 175ml canola oil
  • 125g applesauce
  • 4 large eggs, room temp
  • 1 tsp vanilla extract
  • 340g finely shredded carrots
  • 1/2 cup chopped pecans
  • Fondant for décor (optional) </li

Frosting

  • 340g cream cheese, room temp
  • 170g unsalted butter, room temp
  • 1 tsp vanilla extract
  • 500g powdered sugar
  • 1 tsp lemon juice

Make cake

Preheat your oven to 350F. In a medium mixing bowl, whisk together flour, baking soda, salt, cinnamon, ginger and nutmeg; set aside. In a large mixing bowl, whisk together white and brown sugars, breaking up clumps if any. Add in oil, applesauce, eggs and vanilla, mix to blend. Mix in flour, then carrots. Spray a rimmed 18×13 baking sheet with nonstick spray. (Feel free to use other size of sheet pan, just watch the baking time). Pour onto sheet and spread evenly. Bake 23-27 min or until a toothpick comes out clean. Cool completely before frosting.

Make frosting

Whip cream cheese and butter together until smooth. Add in vanilla and powdered sugar. Whip until flight and fluffy. Decorate with chopped pecans and fondant decorations.
