Before I even get to this recipe, can we take a second to look at how adorable this mug with a cozy is?? Honestly. Dollarama is a gift. I ended up going back and buying this in green and blue too! It has a little button so that you can slip it off when the mug goes in the microwave, and then basically dress your mug again once it’s ready! That’s it, that’s the recipe. “Here’s a cute mug you can dress and undress in a cozy sweater!”
Now that we’re feeling cozy and cute, let’s get to some baking. As a lover of all things sweet, I often have to fight my own lack of self control to not eat all the baked goods that are typically found in my kitchen, as I bake pretty much on a daily basis! If they’re readily available, you can bet I’m thinking about them internally…what I love about this recipe, essentially apple pie in a mug, is that I can still feed my sweet tooth but with a little more portion control. This is clearly a term I use loosely when you see how big my mug is, but at least it’s not a whole pie and that’s a victory I’m willing to accept.
It’s also a heck of a lot easier to prepare, comes together SO quickly and it’s made in the microwave!

In a small-med bowl, combine all the filling ingredients. Mix well to coat.
In another bowl, combine the crisp ingredients. Use a fork or your fingertips to rub them together to moisten.
Add ½ the apples to a microwave-safe mug. Top with ½ the crisp, roughly crumbled over the surface. Add the remaining apples on top. Finish with the remaining crumbled crisp. Microwave 4 ½ minutes on medium power (60%). Mug will be very hot, let cool a few minutes, then top with a scoop of ice cream if desired. Enjoy!
Filling/toppings will sink after cooking, this is normal and expected. Leaves you with plenty of room for a scoop of ice cream!
